Baileys Sweet & Spicy Martini with Tequila

Ever wondered if Baileys goes well with tequila? We have the answer: absolutely! With the smoothness of Baileys, the sweetness of tequila, and the spiciness of hot honey, this cocktail is a must-try. For the cocktail:
1 oz Tequila
1tbsp Hot Honey
For the garnish:
A little extra Hot Honey for drizzling
Optional garnish: Candied Chilli – ingredients below:
Long Red Chilis (up to 20 if you want to make lots of garnishes for later!)
3.5 oz Sugar
3.5 oz Water

Directions
- STEP ONE
Put all your cocktail ingredients into a cocktail shaker with 5-6 ice cubes. Shake vigorously until the drink feels nicely chilled.
- STEP TWO
Pour this dreamy concoction into a martini glass. Yes, it really is that easy!
- STEP THREE
For extra spice drizzle some hot honey on top, then garnish with your chilli of choice. We’d recommend the candied chilli recipe below!
For the optional garnish of Candided chilli:
STEP 1
Mix the sugar and water in a pan and simmer until the sugar is dissolved.
STEP 2
Cut the chilis in half length-ways and deseed. Then cut in half again so each one makes 4 long red strips.
STEP 3
Add the chilis to the sugar water and simmer for around 15 minutes until soft, then let them cool.
STEP 4
Remove the chilis from the water, letting any excess liquid drip off. Wrap the chilis around a metal skewer creating spiral shapes, and place on a baking tray lined with parchment paper.
STEP 5
Place the chilis into a 90°C oven for about 1 hour – or until they are dry, hard to touch, and not sticky. Store in an airtight container until you’re ready to garnish your impressive cocktails!
