Baileys Crème Brulee

6 large egg yolks
30g caster sugar, plus 9tsp
300ml Baileys Original Irish Cream
300ml double cream
200ml whole milk
1 vanilla pod or 1tsp vanilla extract

- STEP ONE
Heat milk and cream with vanilla pod until hot but not boiling, take off heat and mix in Baileys Original Irish Cream.
- STEP TWO
Whisk egg yolks and 30g of sugar until pale and thick. Gradually pour in Baileys Original Irish Cream mixture, mixing well. Cool.
- STEP THREE
Heat oven to 160C, 140C fan, gas 3 and grease 6 small ovenproof dishes. Fill a roasting tin with boiling water so it will come two thirds of the way up dishes. Bake for 25 min, they will still have a slight wobble in the middle. Cool then chill for 2 hours to set.
- STEP FOUR
Sprinkle sugar over cremes. To caramelise, either set under a hot grill for around 1 min or use a blowtorch until golden.
